FOOD & FOOTBALL POST here...

Before watching football every week, I make sure I have a bowl of wings ready to be eaten by MYSELF, and some other people that might be around the house with me.

I mentioned on either [info]nepatriots or [info]nflfans that I make hot wings (or I like to call them... SCOTT WINGS... sc - hot - wings... get it?), and someone commented "Share the recipe!" So one day I was making them I had my camera nearby, and I decided to not only posted the recipe on LJ, but to post pictures there as well (because I know some of you Patriots-haters barely know how to read ;) ).

This recipe, although it is beyond delicious, is NOT healthy! Please don't eat it if you have health problems related to your heart, diabetes, high cholesterol, on a diet, etc. Also, it takes a day of marinating (if you do it right), so make plenty of time to prepare them if you want to do this recipe correctly.


Here are the ingredients...

A stick of butter. It HAS to be butter!! NOT Margarine, NOT "I Can't Believe It's Not Butter", because I've had that stuff... and yeah... I CAN believe it's not butter!

Two bottles of buffalo wing sauce.
(I usually use either Texas Pete or Frank's... not too much of a difference, just use whatever is cheaper)

1/2 bottle of Frank's EXTRA HOT sauce.
(You know, for some extra kick)

Corn Starch.
(I just use the generic store brand, in this case it was Market Basket, I usually shop at Hannaford though... whatever store is close to you, from Market Basket to Piggly Wiggly, just buy what is cheaper)

BBQ Seasoning.

Mixed Salt.

Two packages of THE most obvious ingredient in the whole recipe... Chicken Wings.
(I usually use Hannaford because I like the quality of their wings a little better... but mehhh, these were cheaper. Cheaper > Quality?)

How to make the sauce...

Put the stick of butter in a pot and SIMMER it to make it melt. Make sure it's all melted. Now, I said SIMMER the butter, and you will do this with the sauce all the way through. DO NOT COOK THE SAUCE, SIMMER IT! I posted the picture with the small fire because I wanted to express that you CANNOT have this on high heat. IF THIS SAUCE BOILS JUST A LITTLE... YOU ARE DOING IT VERY MUCH INCORRECTLY!!!!

Pour both bottles of buffalo wing sauce into the pot when the butter is fully melted. REMEMBER, WE'RE SIMMERING... RIGHT!!?

Put in the extra hot sauce. Now, depending on how much you like hot foods, either dump as much as you want in, or only put a few drops in there. If you're really THAT much against hotness in your foods, you might want to skip this step all together... then again, why the fuck are you making wings in the first place, dip shit??

Pour on the mixed salt. Put enough in so that it will have an effect, but NOT TOO MUCH! Just use your common sense.

Pour on the BBQ seasoning. Depending on how much you like BBQ flavor, either pour it on high, little, or none at all.

Add a good amount of corn starch.

Add the same exact amount of flour into the pot as you did with the corn starch. Only way to be sure.

Mix it all up!! Make sure it's all one common color, and KEEP IT ON SIMMER!!!! Let it simmer for a while while you cut up your wings. I usually leave the sauce simmer for 45 minutes to 1 hour... stirring it now and then of course!! Keep simmering it until it gets THICK!

BONUS/TIP RECIPE...

BBQ Sauce! I love the taste of BBQ as well as spicy hotness. I add a bit of BBQ sauce for that extra BBQ flavor.

Now, as you let the sauce SIMMER, you'll be cutting the wings.

How to cut the wings...

You'll make two cuts into the wing, separating it into three pieces. You'll keep two of the pieces, and discard of one. The picture above describes where to cut.

After you cut, you'll see three pieces...

Take the keeper-pieces and throw them into a big bowl. It should start out looking like this...

...and end up looking like that.

What do you do with the pieces you don't keep??

Throw them away, idiot!

Now comes the next part. Take the sauce that has been SIMMERED and THICKENED for the past hour or so, and pour it on top of the wings. Just so you get an idea of how thick the sauce should be, I'll show a bigger picture of it...

As you can see, it's THICK! Like hot chocolate fudge meets hot molten lava!

So, pour it all over the wings.

Wait for the wings to cool down for a bit, and then use your hands to make sure every single wing has been covered in the wing sauce. Since it's so thick, it might not get to the wings at the bottom and whatnot. So, cover all of the wings and THEN make sure the wings in the sauce are evened out and as below the top of the sauce as possible.

Take the bowl of raw wings, and throw them into the fridge for a whole day. You COULD just cook them without marinating, but trust me, it's worth the wait because it tastes way better when marinated. The meat just falls off the bone after it's been soaking in there for a day... ohhhh it's so delicious!
IMPORTANT SIDE-NOTE: Before you go off thinking "OMFG THIS GUY ONLY HAS BEER, A BOTTLE OF SALAD DRESSING, AND HIS BOWL OF RAW CHICKEN WINGS IN HIS FRIDGE!!", just keep in mind that the fridge I am using is a spare fridge in my cellar/laundry room. It is NOT my main fridge. Please don't judge me :*(

After a day of marinating and before you are ready to cook them, take the wings out and put them on a cooking sheet... you know, the thing you put cookies on when you want to bake them in the oven. Now, if you're using an average-sized sheet, you might want to get another smaller sheet to put some wings on as well to make proper room for them.

Make sure you re-dip the wings into the sauce before you put one onto the sheet. Try to get as much sauce on them as you can.

After all the wings are on the sheet, scoop out the last bits of wing sauce from the bowl, and put them on the wings. Don't let good sauce go to waste!

Put the heat on 375 degrees and cook it for about a 1 and a half hours.

The color on top of the wings should have changed to a brownish/blackish (not burned!!) color. When you think they are finished, take one wing out and cut it with a fork/knife. The meat inside should be white, and not pinkish. If you think it needs more time, give it some more time. If you think they are ready, then make sure first before taking them out.

Once you think they are done, eat-up and enjoy!

I hope you have enough people to help you eat these wings... or I hope that you're a gigantic person, because if you followed the directions to the letter, you're gonna have a ton of wings!

I LOVE wings. But I've never actually had homemade...I might try it! I usually just do frozen ones.

I once went to Hooters with some of my guy friends and we got a 100 order...I ate soo many.

Um...for football...well, if it's a BIG game for the Titans I tend to get a nervous stomach so I won't try to eat much.

aw, thanks for sharing. i'm a vegetarian, but i love spicy stuff.

sometimes i get pizza before the game, but usually i just eat whatever is around the house.

I can't imagine being a vegetarian, must be hard not being able to eat meat, but then again maybe you don't like meat in the first place? Nevertheless, I admire the will-power it must take to follow a vegetarian diet. I know I'd fail at it almost instantly!

I love pizza with my wings too! Pizza Hut with stuffed crust cheese it my fav!

What do I eat? Usually we head for the easy pizza option. Or we'll make a yummy ham with mashed potatoes and gravy and corn and some tasty dessert (if it's a really special game). Otherwise I just graze.

So if I were to actually makes these wings (and I may because they look amazing)...how hot ARE they. You said in previous comments in this thread you have an iron stomach...however I do not...I'm a normal human. If I make these I don't wanna bite one and catch fire.

These wings would be very hot for you in that case.

I'd recommend not using the extra hot sauce. The other buffalo sauce alone should offer a flavor that is spicy, yet not hot and overpowering.

Mmm.... wings. You cannot get decent wings anywhere in the UK.

Lots of places offer them on their menu, but when I've tried them, all they do is remind me that you cannot get decent wings anywhere in the UK.

Rarely even see proper wing sauce, but this has prompted me to have another look and see if I can find some, somewhere.

This is my favorite post for a while.

I don't have any pictures, but my football food is bratwurst. Pan fry some brats in olive oil[1]. Remove those and sauté slivers of onions and bell peppers, sliced garlic, and sliced mushrooms in the pan. Season with pepper and cayenne. Place ingredients in a warmed up French roll, and dress with mustard and horse-radish. I use Ed McCaffrey's Rocky Mountain version of both, sometimes the jalapeno mustard, but whatever.



[1] I turn it on medium-high until the outside gets brown, then turn it down and put the lid on until they're cooked through.

I love brats. Especially brats that are filled with cheddar inside! I love biting into a brat when it's hot off the grill or pan, and the juices that fly out and hit your face. It burns with a passion, but it tastes so good!

I've had a craving for brats and sausages lately, so your recipe along with cezukuu's will be my Sunday Night food since my Patriots play on Monday night. Thanks for sharing!

My folks make a good spread on gameday, and it varies. My favorite was when the Eagles were in the Super Bowl, and we got a hoagie tray, and my neighbor made meatballs. It was the bees' knees and ALMOST made up for us losing. Almost.

Game Time Food

My favorite game time food, by far, is buffalo wings. I used to purchase the heat and eat kind, but some how came into 10 pounds of frozen chicken wings and figured that if I could magic them into buffalo wings I'd be set for more than a month. After some trial and error, I hit on a really simple recipe, and (more importantly) a really simple prep that produces a medium-heat, "dry" hot wing.

RECIPE:
2 pounds THAWED chicken wing sections, cut as shown in original post
2 cups hot sauce (I use Frank's RedHot, but you can use whichever one you want, or try one of the concoctions at the end of this post)
3 table spoons of butter
1 tea spoon kosher salt
1/2 tea spoon black pepper
1/4 tea spoon red pepper
1/4 tea spoon garlic powder

Arrange wings on a flat, tin foil-lined baking sheet, and place in a pre-heated 425 degree oven (220 C or gas mark 7 for our UK friends) for 15 minutes. After 15 minutes, remove the pan, flip the wings over and put them back in the oven for another 15 minutes.

After you flip the wings, wait five minutes, then start making the sauce. In a saucepan on medium heat, melt the butter completely. add the hot sauce and the all the spices, stirring until everything's the same color. Turn the heat up to med-high and stir slowly until you start to see bubbles. When you see a few steady bubbles, turn the heat down to low and cover. The wings should be done by now.

Remove the pan from the oven, and generously spoon sauce over each wing, making sure to get underneath the wings as well.

When every wing has been covered, set the oven to broil, and place the wings under the broiler for 3-4 minutes. You can probably go as long as 5, but any longer than that and the sauce will burn.

For those that like their wings a bit sloppier, you can keep any extra sauce from the sauce pan for dipping, since it wasn't in contact with the uncooked chicken.

Hot Sauce recipe (couldn't find that damn Anchor Bar wing sauce recipe.)

SERIOUSLY -- WEAR GLOVES WHEN YOU MAKE THIS, OR YOUR EYES WILL FALL OUT AND EXPLODE.

5 fresh jalapeno peppers, sliced
15 fresh red chili peppers, sliced
1 tea spoon olive oil
3 cloves crushed garlic
1/2 cup chopped onion
3/4 tea spoon kosher salt
2 cups water
1 cup distilled white vinegar
juice from one lemon

Put a sauce pan (enamel lined) on high heat and put the oil, peppers, garlic, onion and salt and saute for 5 minutes. Add the water and cook for 20 minutes, stirring throughout. After 20 minutes, take the pan off the burner and let it cool to about room temp before dumping the whole mix into a food processor. Set the mixer to puree and let it run until everything's smooth. When it's smooth, keep it running but add the lemon juice and the vinegar gradually. After that, shut the processor down and pour the sauce into a big Mason jar (or something similar) with a lid. Stick it in the fridge and use as needed. It's good for 6 months if you keep it in the fridge.

Love your commentary! I'll have to reread it at work so I can see all the pictures. I'm not that into spicy things, but I may have to try these sometime when we're all watching football as a family since the rest of them like spicy things. ;)

I don't make anything special for football watching, as half the time we're having lunch or dinner anyway.

For game day food we now buy the Safeway "Lumberjack" Sandwiches and have the deli people cut them into many sandwiches. That and a bowl of Doritios and maybe some Salt and Vinegar chips.

Breakfast is normally "McDonalds" Sausage and Cheese McMuffins.
I am closer to the west coast so the early games are a morning activity.

You totally should be proud of having nothing but beer, butter and salad dressing in your 'fridge. I'm proud of my five bottles of wine, 2 6-packs, bottle of margarita, jar of pickles and gingerale. Opps, I got butter and Sweet Baby Ray's on the door!

This recipe looks great. I usually just use the sauce from Buffalo's anchor bar. You can get it in the grocery store. And since they developed the chicken wing there, I go with that. It's a great time if you're ever in Buffalo.

That said, my game day food is usually a few beers and a pizza. I eat chips too. And ice cream. I love me some Ben and Jerry's.

I heard of that restaurant that actually invented the Buffalo Wing in Buffalo. I've always wanted to go there and try them out. During the TV segment that I saw this restaurant, these college ya-dudes went in there and did shots of the hottest sauce they have there, I wanna do that!

If you saw the Pats/Bills game a few Sundays ago they showed the wings from that restaurant and how they made them etc.
